Wild Rice Salad

Quick to make, super filling, high protein & nutrient packed. Easy to make for 1 or many!

INGREDIENTS:

  • Cooked wild rice

  • Edamame beans

  • Tomato

  • Cucumber

  • Red onion

  • Black sliced olives

  • Lemon juice

  • Fresh spinach

* measurements of salad ingredients not given because you can add as much or little as you like depending how people you are serving!


METHOD:

  1. Cook rice according to packet directions. 1 cup of cooked rice equals about 1 serve.

  2. If your edamame beans are frozen, cover with boiling water to defrost while the rice cooks.

  3. Slice tomato, red onion and cucumber into slices or bite size pieces.

  4. When the rice is cooked, add the fresh salad ingredients, a few spoons of olives and a handful or two of spinach into the warm saucepan and stir - the heat from the saucepan should help the spinach wilt down a bit.

  5. Squeeze in the juice of half a lemon.

  6. Transfer to a bowl and serve with some extras such as fresh avocado, pickled cabbage and tofu if desired!
